This is such an easy recipe – I saw it here and HAD to have it for my birthday dinner. The photos were simply too enticing! Jason whipped it up and we all enjoyed it. One really can’t go wrong with Thai peanut sauce & crunchy cashews (unless there’s an unfortunate allergy & the peanut butter could be replaced with cashew butter).

Gratitude & Spring Cleansing

21 days ago I made a commitment to my health and well being as I set out on a gluten free, sugar free, vegan diet. I said good bye to coffee and snacking after dinner. And said hello to lemon water and fresh veggie juice in the morning. 60-80% of my plate is now covered in fresh raw veggies. I feel amazing! I’ve dropped the bulk that sat around my midsection, been able to maintain my active lifestyle, and have soft clear skin. I’m meditating and practicing gratitude. In short I’m proud of the accomplishment and couldn’t have done it without my 21 day cleanse posse – you ROCK! xo
